In Japanese the word “maki” means rolled and refers to those nori seaweed rolls filled with rice and vegetables or fish. It is usually served cut into portions so that it can be eaten in one bite. Rice is the key to the success of the recipe. It is recommended to use a special rice for sushi: glutinous, round and short grain, and preferably of the japonica variety.
