– 1 lemon, plus more for serving
– 1 cup of pearl couscous
– 1 English cucumber, quartered
– 1/2 cup of thinly sliced radishes
– 1/4 cup of fresh cilantro
– 1/4 cup of fresh chopped mint
– 1/3 cup of diced red onion
– Salt and pepper to taste

Here’s how to prepare this delicious salad:
1. Start by cooking the pearl couscous in a pot of heavily salted water until it is al dente, following the package instructions. Once cooked, rinse the couscous with cool water and drain well before adding it to a large bowl.
2. Season the shrimp with salt and pepper. In a medium skillet over medium-high heat, add 1 tablespoon of olive oil. Sauté the shrimp until they are opaque and just cooked through, which should take about 4 minutes. While cooking, zest a lemon over the shrimp and squeeze the juice of half a lemon.
