This is a classic American recipe and, in reality, although the name translates as banana bread, it is a cake with this fruit. It is a perfect preparation to take advantage of very ripe bananas. A simple homemade sweet to have for breakfast or to improvise a snack.
> 4 ripe bananas
> 2 eggs
> 280 g of flour
> 200 g of brown sugar
> 100 g butter
> 1 teaspoon yeast
1. Beat the eggs with the sugar until white.
2. Mash the bananas until you get a puree with a homogeneous texture.
3. Next, add the melted butter and beat carefully.
4. Pour in the mashed banana and mix until combined. Gently incorporate the flour with the yeast.
5. Grease the mold with a little butter before pouring the mixture you have prepared.
6. Place the mold in the oven and let it heat up for 50 minutes in the oven preheated to 170 ºC.
7. Turn off the oven and let it rest for a few more minutes inside.
8. Let it cool on a rack outside the oven and carefully remove it from the mold.
