Panellets (which in Catalan means rolls) are a typical sweet from Catalonia, the Balearic Islands and the Valencian Community that are made to celebrate All Saints’ Day, a holiday that invites us to remember those dear people who are no longer here. It is also Castanyada day, a tradition in which in addition to this snack so similar to marzipan, roasted chestnuts and sweet potatoes are tasted, two abundant fruits at this time of year.

The panellets are made with almonds, sugar and egg, creating small rounded shapes that will go through the oven at the end. The most popular are usually surrounded by pine nuts. But there are also those that incorporate sweet potato or cocoa in their dough (like this chocolate recipe) which turns out to be an option just as delicious as those marked by the elongated pine fruit.
