Typical of La Mancha cuisine, ratatouille can be a unique dish, an excellent garnish or a filling for empanadas. The recipe we propose is very easy to prepare and by cooking it in the microwave you will save time and dirty fewer pots. If you want you can accompany it with an egg or a good ham.
> 1 eggplant
> 2 onions
> 1 red pepper
> 1 green pepper
> 1 zucchini
> 3 cloves of garlic
> 3 tablespoons tomato sauce
> 5 tablespoons extra virgin olive oil
> Salt to taste
> Pepper to taste
1. Wash and cut the vegetables into small pieces.
2. Place the vegetables in the microwave-safe container you are going to use and season with salt and pepper to taste.
3. Add the oil and mix well.
4. Cover the container and place in the microwave. Program 20 minutes at maximum power, and every five minutes to stir the ingredients.
5. When there are three minutes left to finish, add the tomato sauce.
6. Serve hot and adjust the salt if necessary.
