Along with cream and cocoa cream, dulce de leche belongs to the ‘holy trinity’ of those with a sweet tooth. Are you also part of that team that scoops it up by the spoonful whenever it has the chance? Well you’re in luck! There is an alternative to the traditional recipe for which you will only need one ingredient that you may have at home in reserve. The influencer Sabina Banzo has shared with her more than 880,000 followers on TikTok (@sabinabanzo) this trick that will surprise you.
The truth is that with a very simple and economical preparation you can prepare dulce de leche whenever you crave it… and you have a bottle of condensed milk on hand!
If patience is not your thing, you can also apply this trick in the pressure cooker. Simply remove the paper from the can of condensed milk and place the can lying flat inside the pressure cooker. Set the valve to position 2 and bring it to a boil.
When the steam begins to come out, program the cooking for 30 minutes and, after this time, remove the pot from the heat. Then, let it sit for about 4 hours so that it cools and loses pressure so you can open it safely.
In reality, the original recipe for this traditional Argentine dessert is not much more complicated. You just have to heat a liter of whole milk with sugar over medium heat until it dissolves. Then, add vanilla and half a tablespoon of baking soda and let it cook for two hours over low heat.
Once the dulce de leche has thickened, continue stirring it off the heat for about 10 minutes until it cools to prevent it from sticking or getting lumps. Finally, you can pour it into jars and seal them in a water bath or simply store them in the refrigerator.
Although dulce de leche is delicious on its own, it is an ingredient that will be very useful for a multitude of pastry recipes, such as cakes, flans, pancakes or alfajores. Another possibility is to use it to fill your pastry bag and fill homemade wafers, as an accompaniment to wafers and toast, or any other dessert you can imagine!
