That is why you should avoid discarding these or any other leftover parts when cutting vegetables to put into practice a simple and economical trick that Mireia Etxebarria (@mimamivegana) has shared with her 243,000 followers on Instagram.

Once this is done, you can keep the cubes in the freezer in a freezer bag or wrapped in baking paper in a container until you are going to use them. Simply, when you feel like making a soup, take a pill and put it in boiling water with the noodles or any other stew with vegetables, meat, pasta or rice that you are going to prepare.
These homemade concentrated broth cubes are an alternative to supermarket preparations, without additives, colorings or preservatives. In addition, they are a distinguished example of efficient cooking with which you can enrich any dish in a natural way. You have already seen how the vegan option is prepared, but you can adapt the recipe to make the traditional chicken broth cubes.
In this case, sauté one or more chicken breasts with the already chopped vegetables – or their leftovers -, salt and spices to taste. Let them poach well, then remove them from the heat and repeat the previous steps. First, blend the sofrito in the blender and then you can return the mixture to the saucepan so that the pasta sets better. Then, place it on a tray lined with baking paper and put it in the freezer. Cut the preparation into tablets, return them to the freezer, and you will always have chicken broth ready to cook!
