“La Bullipedia”, an encyclopedia of restoration promoted by the chef Ferran Adrià, has obtained the Grand Prix de la Culture Gastronomique 2023, awarded by the International Academy of Gastronomy (AIG), in awards in which the Sommelier José Polo.

The recognition rewards Adrià‘s work with elBullifoundation for recovering gastronomic memory in fifty volumes of which twenty-three have been published to date.

This prize, previously awarded to other Spanish representatives such as José Andrés (2017), the Basque Culinary Center (2014) or Madrid Fusión (2007), has been accompanied in this edition by other recognitions such as the Grand “Prix de l’Art de la Salle ” to the sommelier José Polo, from the Atrio restaurant, which currently has three Michelin stars.

The edition has also featured other lucky winners such as the Cordovan chef Paco Morales, “Prix Au Chef de l’Avenir” and owner of the Noor restaurant, or the “Prix au Sommelier” Lucía Fuentes, sommelier at the Aponiente restaurant.

The book Cenador de Amós, by chef Jesús Sánchez, has won the “Prix de la Littérature Gastronomique”, while the short film Character, from the Ministry of Agriculture, Fisheries and Food, has won the “Prix Multimedia”.

The pastry has been represented by Lluc Crusellas, “Prix au Chef Pâtissier” and pastry chef of El Carme Pastisseria, a small bakery in the city of Vic (Barcelona).

The proposal of the candidates for the AIG awards corresponds to the Royal Academy of Gastronomy, as a founding member, which chooses the Spanish representatives in the different categories that will compete with the proposals of the other member countries.
