Ice wines, little known in our country, are those that are made with grapes harvested when the first frost occurs. When the cold arrives and temperatures fall below 0ºC, the vineyard is subjected to freezing, which causes a strong concentration of sugar in the grapes. But in addition to being characterized by their sweet flavor, they have very peculiar nuances. This wine could be defined as a successful rarity and in any case very pleasant. It is made from overripe grapes that resist even the first frost. It is aged for four months in barrels and the result is a reddish wine. The nose is very aromatic with hints of citrus fruit, raisins, dried flowers and honeyed touches. In the mouth it is delicious, enveloping and with good acidity that gives it freshness.
Within the Garnachas project guarded by Raúl Acha and in the Nájera region we find this strange wonder. This sweet, pink-colored wine with low production is aged in barrels for 18 months. Its grapes are harvested in the month of January and at dawn. On the nose it displays aromas of candied orange, dried apricots, dried herbs and floral notes. In the mouth, good acidity gives it freshness and its finish is long and fragrant.
This sweet wine is made with Verdil grapes from organic vineyards and the Alforins area. The bunches are frozen for two weeks and fermentation is interrupted when 8.5 degrees have been reached. At that moment the wine offers a wide range of aromas, especially hints of dried fruit, sweet spices such as cinnamon, hints of honey and flowers such as white rose petals and jasmine. In the mouth it has a good balance between sweetness and acidity.
Whether it is an Eiswein made with Riesling grapes or Gewürztraminer grapes, it is one of the most palatable oenological jewels. They can be considered cult and low-production wines. Its nose is deceptive with an explosion of pineapple-type tropical fruit, citrus fruits such as candied orange, flowers, honey, sweet spices and dried apricots. On the palate it is sovereign, with that perfect balance between acidity and sweetness and an eternal finish full of nuances.
Glorious would be a good nickname for this Canadian ice wine. Canada is famous for the production of these wines since it enjoys the best conditions for their production. Its color is slightly salmon-coloured. The nose seeks excellence with aromas of stone fruit such as apricot and peach, yellow apple and dried chamomile-type flowers. In the mouth the symbiosis between freshness and sweetness is perfect, as well as its finesse and elegance.
These are old vines whose vineyards are located at high altitudes, we are talking about almost 1000 meters and on slate and gravel soils. The wine is harvested late, in mid-November and its grapes will have a slow fermentation. It is a very pleasant and fresh sweet wine. Its nose conquers us with honeyed notes, orange peel and nectarine-type fruit, apricot and passion fruit. The mouthfeel is juicy, friendly and enveloping.
