1. Put plenty of water on the fire in a large pot. When it starts to boil, add the spaghetti.

2. Let it cook for 10 minutes, or the time indicated by the manufacturer on the package, stirring occasionally.

3. Remove the rind from the bacon and cut it into small cubes.

4. Heat the olive oil in a large, flat saucepan. When hot, add the bacon and fry until golden brown (2-3 minutes); then remove it. Mix the six egg yolks with the grated Parmesan and the bacon.

5. Once the spaghetti is al dente, drain it.

6. Add the spaghetti to the sauce, sprinkle with plenty of freshly ground black pepper and adjust the salt. Stir quickly so that the sauce is mixed well without the egg curdling, since then it would look like scrambled.
