The elaboration process of the Anxoves de l’Escala is carried out by master anchovies and “anxoveres”, who carefully select the best fish and supervise the natural maturation process of the anchovies in drums for a minimum of 6 months and up to 2 years. For their part, the “anxoveres” women of L’Escala have been in charge of carefully searing, seasoning, placing and filleting the anchovies for generations, keeping the process intact and characterized by its delicacy and know-how.
