Sublimotion is the restaurant of chef Paco Roncero, with two Michelin stars, whose menu is one of the most expensive in the world: 1,650 euros per person. The restaurant, which is located in a hotel complex that has Hard Rock Café on Playa d’en Bossa, in Eivissa, is currently the most expensive in Europe.

The second most expensive establishment in Europe, the French website Chef’s Pencil, is Ciel Bleu, in Amsterdam (The Netherlands). Located on the top floor of the Okura hotel, chef Arjan’s menu costs 595 euros per person.

Roncero opened the restaurant in 2014 and offers an exclusive gastronomic show. It has capacity for only 12 diners who sit at a single table in a 70-square-meter space and technology is key in these dinners, which last two and a half hours, since virtual reality plays an important role.

Thanks to virtual reality glasses, diners can see, for example, how food falls from the sky. In addition, the walls are giant screens that help to recreate the entire context so that customers can go deeper into this sensory experience. These screens can also transport customers to places in the world, specifically in 10 different spaces, combined with shows, light, projections and music.

The Sublimotion experience is unique, and the idea arose in the Research Workshop of Eduardo González, who is the creative director and founding partner of the restaurant. That is where the concept of the technological and gastronomic space that is Sublimotion was coined.

In the book that Roncero and González published under the name of the restaurant, they pointed out that their establishment is a “new format of communication and entertainment.” They offer an “immersive show that seeks to maximize the pleasure of sitting at the table.”
