How did you become a dietary entrepreneur?

Because the keto diet changed my life, starting with my own body, and after being a professional in the food industry for 10 years, I tried to share my success with my own keto company.

Did you eat badly before?

I had always been overweight and tried various diets that always made me lose a few pounds and then gain back even more, and I had been obese for thirty years and believed it was my fault.

Why did you feel guilty?

Because he suffered from bulimia and then anorectic episodes; vomiting, sprains…

Did he hate the fridge?

Or I let myself be dominated by it: sometimes I passed out from fasting and then ate the whole fridge until little by little, reading about dietetics and consulting specialists, I realized that it was not my fault, but what I ate and how and when

Why wasn’t his body responding?

The answer was to study our evolution as a species.

Is the keto diet similar to paleo?

With a few exceptions…

Should we eat like Cro-Magnons?

A mammoth had proteins, fat, viscera… But not cookies with chocolate, or crispy bread or tasty cereals and sugar; a lot of sugar… Which is exactly what we eat today for breakfast and snack every day.

Isn’t this the energy we need?

To spend eight hours in front of the computer and five more looking at the mobile phone? We accept that we barely move and that, at all costs, we take 5,000 steps a day.

Why did you eat more than necessary?

Because of unhealthy habits generated and generators of uncontrolled anxiety… Because I ate too much!

How did he beat them?

When I changed my diet to keto, I changed my body’s energy substrate and then, instead of basing my diet on glucose and sugars, I switched to using and expending fat: my own fat.

Isn’t keto another dissociated diet?

The ketogenic or keto diet reduces the amount of carbohydrates, sugars, potatoes, rice, and we favor foods rich in healthy fats… And vegetables, salads, cauliflower and, above all, proteins.

What else do they do without?

Of all cereals and legumes.

Well, they are pillars of the Mediterranean diet.

But good, green vegetables are better than pulses.

For example…

Broccoli, spinach, cauliflower, lettuce, carrot, peppers; and not so much fruit, but lots of red fruit, strawberries, blackberries, lemons and meat, fish, eggs…

What do they have in common?

That our body is like a hybrid car: you can use petrol or the battery and glucose is an easy energy, which gives you an immediate injection. However, these foods do not provide this kind of injection.

Are they healthy food for evolutionary reasons?

Because the evolutionary, what we have evolved for, is to use fats as a primary source of energy. But the food industry wants to sell more and more and the sooner the better; and has discovered that sugar makes us addicted to its products.

Does the keto diet prescribe eating more fat to lose weight?

That’s what I discovered after trying other yo-yo diets that left me heavier than I started. On keto I was eating fat, but losing even more.

Vegetable fat, I guess.

Olive oil, avocado … But also ham: we don’t demonize saturated fats, because we need them in their right measure, like everything.

I go to the market: what do I buy?

Feed yourself with what suits you, not the industry. I buy the fresh food I told him, but I insist on fresh products as much as without processed, ultra-processed, sugar and additives.

What is keto day like?

Mine starts with intermittent fasting, but good, because you only feel like eating twice a day, because it’s so filling. It’s 1 pm today and I haven’t eaten yet. I’ll have baked chicken for breakfast with veggies and Greek yogurt for dessert with all its good fat. Nothing light.

Why not light?

They are ultra-processed. Then at 5 p.m. a green tea until 7 p.m. when I will have grilled salmon for dinner or scrambled eggs with shrimp or asparagus and strawberries for dessert.

From the diet created the company?

When I worked in the food industry I saw all the additives they put in food and I said to myself: “This doesn’t go with me”. And now I sell olive oil and breads, cakes, pizzas… alternatives.
