Following in the footsteps of Cabot – very discreet in regards to his relationship with Don Felipe and Doña Letizia – the Royal Family has not missed the opportunity to discover his new project, ‘Mia’, a restaurant that focuses on Mediterranean food and innovation, with specialties such as sea bass ceviche with strawberries, Russian salad with pickled red mullet, broken eggs with lobster or sautéed squid with sobrassada.

In addition, their specialty is rice – especially seafood paellas – fideuá and stew, as well as fresh fish, a premium product that comes from the Balearic coast and that varies daily depending on the fish caught in the market. “I try to keep the intervention in the fish to a minimum, since when it comes to a quality product, it is not necessary to add sauces or extra ingredients. The key lies in accompanying it with a suitable garnish” explains Guillermo Cabot, who confesses that the The key to his success is none other than “giving care and doing things well”.
