But his culinary skills also provide another advantage that has nothing to do with professionalism. The Madrid chef makes use of his talent for the complementary feeding of little Laia, his daughter with Cristina Pedroche.

“I have cooked something very interesting for Laia,” the chef begins. He explains that first he made her some knife-chopped chicken burgers, “but they were a little dry for her.” So he found a perfect alternative, some Russian fillets with free-range chicken sirloin chopped with a knife and, to this meat, he added a series of ingredients with which he achieved a juicy and tender texture.
To start, he added oregano, nutmeg and “a bit” of garlic powder. But the trick to achieving that juiciness was to add unsalted and sugar-free breadcrumbs and soak it in oat milk, to then mix it with the meat and spices. “Today Laia is going to be amazed, because this has turned out almost like a hamburger, almost like a mousse that you don’t have to chew, it melts in your mouth,” says Muñoz. “It is super juicy and, in addition, the oat milk and the crumb help the burger to caramelize,” the chef emphasizes.
He cooked them over low heat “so that they are very juicy and caramelized on the outside, creamy and juicy, with an umami and sweet flavor, resulting from the caramelization of the oat milk in the pan,” the chef says in the text that accompanies the publication. “Zero sugar, zero salt and a lot of flavor for my little Pedroche (and for the big one too),” he remarks.
