1. To avoid anisakis, you can clean and freeze the salmon beforehand.
2. Defrost the salmon and remove any bones that may remain and set aside.
3. Finely chop the chives, gherkins and chives.
4. In a large bowl, pour the chives, add the capers, gherkins and chives.
5. Mix the ingredients well and add the extra virgin olive oil, the sauce, the mustard, the Tabasco, and the salt and black pepper.
6. Cut the salmon into small pieces.
7. Add the fish to the mixture and reserve in the refrigerator.
