First of all, this chef explains the main difference between the minced meat that you can use to make hamburgers and the one that is ideal for making Bolognese sauce. This is none other than the typical question that our trusted butcher will ask us when we order this product: “Do you want it cooked once or twice?” At first glance, there are very few differences between them, but the decision to opt for one or the other option will influence (a lot) the preparation process and, above all, the flavor of your dishes. 

“When the meat has only been through the mincer once, even if we squeeze it very hard, it is very easy for it to break,” explains Guibert in this video. This fact represents a handicap when making hamburgers or meatballs, however, this shredded meat is ideal for cooking Bolognese sauce. In addition, the meat that is chopped once can be used as a filling for a meat pie, lasagna, cannelloni or to accompany your nachos, among other recipes.

The chef points out that the meat that we usually buy in the supermarket has only been chopped once and is probably prepared with other additional ingredients. That is why this professional recommends always reading the labels carefully before choosing the product with which you will make your burgers.

On the other hand, “when the meat is minced twice, it obtains a much more consistent texture,” argues David Guibert. This explains why it is much easier to shape homemade hamburgers or meatballs with meat that has been through the mincer twice. This way, it is not necessary to mix the minced meat with flour, egg or breadcrumbs to prevent it from separating during cooking. Therefore, on your next visit to the butcher, ask for double minced meat, as it is the best option to prepare tasty and consistent burgers, according to a kitchen professional.
