Cavas Hill is a winery located in Olèrdola (Barcelona), which produces high-quality wines and is specialized in the production of cavas.

The winery has a wide variety of cavas, from the youngest and freshest to the most elaborate and complex, and is characterized by its choice of high-quality grapes, its traditional production process and its prolonged aging in underground cellars. From the United Kingdom to the Penedès

The history of Cavas Hill goes back to the person of Joseph Hill, a British businessman who arrived in Penedès in 1761. His descendants built La Masía, the current headquarters of the winery in Moja, and in 1887 a winery was built next to La Masía .

In addition, the winery has five underground galleries dug into a rock called ‘tapassot’, making it one of the most unique cellars in the Penedés.

In 2018, the original winery was renovated to commemorate the centenary of the reform of the modernist façade of the winery, with a new room called Sala Panot, as a tribute to the architect Antoni Pons and Gaudí. This room is the inspiration for two of the most emblematic cavas from Cavas Hill: Panot Gaudí and Cuvée 1887.

Throughout its history, the winery has experienced great growth and has gained a great reputation in the world of wine, especially with regard to the production of cavas. The winery has been recognized with various awards and recognitions in national and international competitions. In addition, it was one of the first wineries to compose the Cava Denomination of Origin.

Currently, Cavas Hill is still a family business and remains true to its roots, continuing to use traditional techniques in the production of its wines and cavas. They have two lines of cava: Cuvée 1887, related to the festive spirit of the Belle Époque; and the Panot Gaudí, a tribute to Modernism that is so closely identified with its origins. They also make still wines inspired by nature, which express all the essence of the Penedès and the Mediterranean.

Panot Gaudí, a tribute to Modernism

As we have already briefly mentioned, Cavas Hill is intrinsically related to Modernism and its architects. As a tribute, they have created the Panot Gaudí cava, a straw-yellow cava with golden reflections, fine, persistent and slow-evolving bubbles.

This proposal -which mixes Xarel·lo, Chardonnay, Macabeo and Parellada- is very well structured and elegant. The aromas of aging stand out on toasted backgrounds (hazelnuts, toast), bakery notes, sponge cake and with a touch of citrus (grapefruit).

On the palate, it is broad, balanced, creamy and sweet on the palate with notes of aging. Clean and persistent aftertaste where, once again, toasted notes with light citrus appear. Ideal for processed and grilled meats, fish in sauce and cured cheeses.
