A sparkling, non-alcoholic vinegar-based wine reminiscent of the drinks of ancient Rome

The sparkling wine market is a booming market and Domori del Polo del Gusto knows this well, a gourmet products distribution company based in Turin. Since last January, it has included Mazzalùa among its references, a sparkling, non-alcoholic wine that, although currently only sold in Italy, points to future distribution abroad. But the most striking thing about this drink is its inspiration in posca, a mixture of vinegar, spices and aromatic herbs that was very popular among the inhabitants of ancient Rome.

Under the subtitle of Alcohol Free Sparkling, Mazzalùa is an innovative drink, made from a combination of aged wine vinegar and white grape must. The live bubbles are the perfect complement to this aromatic mixture, which wants to become the reference non-alcoholic drink for young people who seek to take care of their health without giving up the unique and inimitable sensory experience that wine provides.

Mazzalùa is a wine with a gently acidic note on the palate and a sweet touch, the result of the combination of vinegar with grape must. Its vibrant and mischievous foam encourages spirits to enjoy life’s important moments. The aromatic complexity of Mazzalùa on the nose is another aspect that invites you to discover and taste this product.

Aged wine vinegar is one of the essential elements of the Mazzalùa recipe. Under certain temperature and oxygenation conditions, wine can be attacked by bacteria that transform alcohol into vinegar. The producers of this sparkling wine have opted for a slowly and naturally aged vinegar, to avoid the addition of selected bacteria available on the market for the production of vinegars.

The non-alcoholic wine sector is an established market that is increasingly adding young (and not so young) consumers who decide not to consume alcoholic beverages. Mazzalùa aims to seduce this audience with a fresh, pleasant, refined, sparkling product with zero alcohol. An unrepeatable blend of balance between softness and acidity, between the vinegar base that dates back to ancient Rome and the contemporary sparkling wines. And it costs only 25 euros!

This product has come to market after almost three years of research. Professionals with different skills participated in the project, led by Francesco Razzeti, an expert in the world of agri-food production. Together with him, a marketing specialist, a journalist and an oenologist, they founded the company Poska 1820, which is named after the ancient Roman drink.
