Christmas is one of the best times of the year to enjoy a good wine in the company of our loved ones. We selected seven great references, relatively classic, to be the best host at these parties.

This is a great cava, blessed by the patience that will dress our table with its good presence. Its long aging gives it great complexity and in its palate, acidity and a well-integrated creamy bubble merge in harmony. In it we find aromas of bakery, dried fruit, confectionery, chamomile-type flowers, fine toast and sweet spices. It will be perfect for receiving and first appetizers.

It is always a blessing and a gift of the patience of the person who makes it, to start with a chamomile. Its vineyards are located in the best areas of the region and here the soils are a key ingredient. The chamomile has remained under the protection of the veil for 6 years. This gives it a complexity and intensity both in its sharp nose and in the palate. Aromas of dried flowers, dried fruits such as raw almond, oily, toasted notes and mineral touches that reflect albariza stand out. In the mouth it is powerful, dry and somewhat saline.

For those who consider themselves a lover of the Verdejo grape, they should be seduced by this novel and absolutely gastronomic wine, although of low production. Its old vineyards are located in Nieva, Segovia. The weather conditions are extreme and at an altitude of 800 meters. The wine is intense in aromas and very broad in the mouth thanks in part to its 12 months in barrel. It is expressed herbal, floral, with fresh tropical and citrus fruit. In the mouth, bitterness and acidity strike a good balance.

A little in the shadow of the famous red wines, these gems of very long aging and unparalleled personality are hidden. The vineyards are located in Alto Najerilla and their production is limited to exceptional vintages. Slightly golden in color and complex nose. Its fruit is yellow plum, apple, dried apricots, sweet citrus, sweet spices, smoky and aniseed touches. The palate is very smooth, marked by an acidity that leads to eternity and a very aromatic finish. It supports strong dishes very well.

Its vineyards enjoy the generous altitude in these parts, in this case being 800 meters and on gravel soil with a limestone bottom. It is a wine with an intense cherry color. The nose concentrates black fruit such as blackberries, plums and blueberries. It also offers hints of licorice, herbs, spices and fine woods. The palate is fresh, with polished tannin and leaves a sensation of bitter cocoa for the finish.

For our most hearty dishes, this robust and powerful red wine would be a success. Their vines come from Finca L’Aranyó and their extreme conditions put them to the test. It has remained between 9 and 12 months of aging in barrels. It is a wine with an intense garnet color. Its expressive nose well assembles the essence of the two grape varieties with aromas of black fruit such as blueberries, cherries, currants, cocoa, spices and fine touches of smoked wood. The palate is sapid but delicate, very fruity in the palate and aromatic in its long finish.

For the end of the party, an Oloroso would be fabulous, in this case from Montilla-Moriles and a slightly sweetened Pedro Ximénez grape. It has remained sheltered from the air for about 30 years and this oxidative aging gives it qualities that make it unique. It is sharp and penetrating on the nose with touches of fine wood, toast, dried fruits such as walnut and hazelnut, sweet spices, smokiness and raisined grapes. In the mouth it is absolutely enveloping and has an eternal finish.
