Haute cuisine and hospitality account for 20% of the income from luxury experiences in Spain, which together reaches 8.6 billion euros. This is highlighted by the Círculo Fortuny report “Perspective of haute cuisine and hospitality in Spain”, with analysis by McKinsey.
Haute cuisine is ahead of other experiences and categories such as hospitality and wellness (11%), fashion, accessories and leather goods (10%) and cosmetics and fragrances. In fact, haute cuisine already represents revenues of 1.7 billion euros, which is 10% of the total turnover of the high-end industry, which reached 17 billion in 2022.
The rise of haute cuisine and hospitality is largely due to the push of Spanish restaurants positioned among the world’s elite. In fact, Spain is the fifth country in the world with the most Michelin Star restaurants and has 47% more restaurants with this distinction compared to 2015. Likewise, our country has greater representation among the 50 best restaurants in the world in 2023 according to the The World’s 50 Best Restaurants ranking, with a total of 6 establishments
In this sense, we must highlight the relevant role played by the wine sector. Spain is the third largest producer in the world and exports up to 75% of its harvest. Olive oil and Iberian ham are also some of the high-end gastronomic products on the rise.
The growth potential is high, because, as the case of wine demonstrates, the value of exports (about 3,000 million euros) is far behind France or Italy.
