The Cañadío de Santander restaurant, with Pedro José Román in the kitchen, has been proclaimed this Sunday winner of the XVI Spanish Potato Tortilla Championship ahead of O Cabo (A Coruña) and Tizona (Logroño) with a preparation where it has combined the poached onion and monalisa potato.

Within the framework of the Alicante Gastronomic ‘Alma Mediterránea’ contest and within the II National Congress of Potato Tortilla, this championship was held at Fira Alacant in Elche in which fifteen chefs from eight autonomous communities competed with a jury that, chaired by Rafael García Santos, has been formed by Carme Ruscalleda, Paco Torreblanca, Kiko Moya, Fran Martínez, Alberto Ferruz, José Gómez “Joselito” and the journalist Pepa Fernández, from RNE.

After explaining that the title “is like a dream” because the “level has been very high”, Pedro José Román has revealed that the secret of the recipe, which has been prepared in 75 minutes, was in the combination of poached onion, with the egg, the monalisa potato and the arbequina olive oil.

Second and third place went to the O Cabo restaurant (A Coruña), with Isabel Gesto and Ramón Rodríguez, and to the winner of the last edition, Carlos Olabuenaga, from the Tizona restaurant (Logroño), respectively.

The awards were presented by the president of the Alicante Chamber of Commerce, Carlos Baño, the president of the Alicante Provincial Council, Toni Pérez, and the Minister of Innovation, Industry, Commerce and Tourism of the Generalitat, Nuria Montes.

Alicante Gastronómica recovered this championship in 2021, which had been organized by the prestigious gastronomic critic Rafael García Santos for thirteen successful editions within the framework of lomejordelagastronomía.com in San Sebastián and which has subsequently moved to Alicante.

The chefs who also participated in the final were Alexander Londoño (A Raxeira de Pote, A Coruña); Pepa Miranda (Casa Miranda Bar and Restaurant, Betanzos); Iñaki Lazkano (Bar Sorginzulo, Bilbao); Alejandro Oliveira (La Falda Bar and Restaurant, Madrid); Carmen Carro and Santi Pedraza (Taberna Pedraza Restaurant, Madrid); Jennifer Pacheco (Pan y Tortilla, Ponferrada) Ane Uli and Humberto Segura (Antonio Bar, San Sebastián) and Óscar Guantes (Malasaña, Valladolid).
