Direct from Barcelona (it was the best in the world in 2022), but only for a few days; with New York origins and Latin American inspiration; with legend of thieves, mansions and stolen jewels; or with a traditional, modernized essence. Four establishments that have recently arrived in the capital conquer with their proposal of cocktails and food.
You will no longer have to travel to the heart of Barcelona to enjoy drinks from the best cocktail bar in the world in 2022 and the fourth in 2023 according to The World’s 50 Best Bars list. At least for four days: from Sunday, January 28 to Wednesday, January 31. The famous Paradiso moves to the Peruvian restaurant Oroya, under the direction of chef Diego Muñoz, installed on the fourth floor of The Madrid Edition hotel (Pl. de Celenque, 2), coinciding with the celebration of Madrid Fusión.
The cocktail bar owned by Giacomo Giannotti, which started in 2015, closes its doors in Barcelona to debut in the capital with a very special proposal: its The Evolution menu, inspired by the evolution of the human being with cocktails like Fleming, returning in the time until the discovery of penicillin; Tesla, paying homage to Tesla coils; or Copper, transporting us to the age of metal. You will have to discover the ingredients during your visit to this (ephemeral) cocktail temple in Madrid, which also presents a repertoire of dishes designed for the occasion between Oroya and Paradiso. Hours: from 5 p.m. to midnight.
There is the story: that of Pete Salerno and Dominick Latella, the most successful jewel thieves in the United States in the 1970s, also nicknamed the “Fat Cat Burglars.” There is the space: an elegant living room with a seventies air inspired by the winding mansions they used to sneak into during a dinner party. That’s why they were also called “The Dinner Set Gang.” And there are the cocktails: a twist on the most classic drinks with original versions of the Old Fashioned, the Paloma, the Boulevardier, the Mojito or the Margarita.
Fat Cats (c/ del Infante, 5) is the new signature cocktail bar, and clandestine essence, in the Las Letras neighborhood. His menu has been designed with the advice of the emblematic 1862 DryBar. It starts with a proposal of Aperitifs to which the Sours follow
It came directly from Brooklyn – where it opened its doors in 2015 – to the capital. Having just completed a year in which its gastronomy of Peruvian flavors with a modern touch has conquered palates, the Llama Inn restaurant (c/ Conde Xiquena, 2) surprises by opening a cocktail bar on its ground floor: Bar Llama. A space with minimalist elements, warm lights and materials that pay tribute to various Latin American cultures, especially Peruvian.
Natasha Bermúdez, one of the most relevant mixologists in New York and bar director of the Llama group, is the architect of the adaptation of New York cocktails to Madrid tastes without losing the Latin essence. The proposal includes everything from a version, Yayo Hipster, of the well-known Madrid vermouth to a wide selection of pisco sour and other cocktails. There is no shortage of those that do not contain alcohol, such as Chicha Morada: purple corn, pineapple, apple and cinnamon. The experience is completed with a snack menu designed in collaboration between the kitchen team and Natasha, based on bites such as fried squid with spicy mayo and pilaf skin, chicken anticucho with chimichurri and yellow chili, and crudités with white garlic aioli. Hours: Monday to Thursday from 6pm to 1am; Fridays and Saturdays from 1:30 p.m. to 1 a.m.; and Sundays from 1:00 p.m. to 1:00 a.m.
Neither a cocktail bar nor a cocktail bar nor a club nor a restaurant, but everything at the same time. Gilda Haus (c/ San Mateo, 6) is a place to have a vermouth, a drink or a signature cocktail –by the work and grace of Carlos Carlos Luis Marrufo of Marrufo Coctelería–, taste original gildas and other dishes, and dance to the rhythm of the music played by the DJ on duty. With a nightclub aesthetic wrapped in orange-red – in the carpets, in the velvet curtains, in the benches, on the walls – and a bar, tables, chairs and metal stools that emulate the terraces of bars throughout the city. life, this new place to be has arrived from the hand of the La Gildería team – two years animating the La Latina aperitif.
The menu reveals cocktails such as the Bloody Mary –Marrufo’s original recipe with a spicy touch and accompanied by a very special gilda–, the Rosita –a reinvention of the Negroni for bitter fans– or the Mosto Mule –non-alcoholic, a must with a slight spicy touch. In the repertoire of vermouths, the Criollo – with mezcal, tonic water, smoke and a touch of orange – or the Primavera – with pisco, Saint-Germain, tonic water and a touch of lemon – surprise. Accompany the drink with their popular gildas (in many different versions of the classic), funky cheese with dried apricot bread, raisins and wine; Sea ham with tumaca bread or pastrami crystal muffin with haus sauce and pickle. Among other curious proposals, such as its only dessert (for the nostalgic): Tigretón.
