Sara Peral and Jorge Muñoz, from the renowned Madrid restaurant Osa, have won the award for Best New Chef at the 22nd edition of the Madrid Fusión gastronomic congress.
These two young people from Madrid have been the winners of this edition in which Carlos Casillas from Avila (Barro, Ávila) has won second place and Alatz Bilbao (from the Bakeade restaurant in Vizkaya) and Iris Jordan (Ansils, Huesca) have won exequo the third prize.
“This is very exciting, it is the first edition in which there have been more women. Thanks to this contest, no one wins, we all win and we put in position many colleagues who work hard and almost no one knows and so today you know them,” he said. said Peral after collecting the prize.
For his part, Muñoz has expressed that the true revelation is in their “hearts”: “we really want to change things, change gastronomy.”
Before opening Osa, Peral and Muñoz, former employees at Mugaritz, invested more than two years in profiling this restaurant that is based on a line of thought “not exempt from primitivism”, as they define themselves.
Their dishes combine knowledge, culture, unprecedented techniques, devotion to nature, meticulous control of textures and temperatures, and an insatiable desire to find unique products. In short, daring and hedonism in refinedly current proposals, which stand out from fashions and routines.
It is the first competition created in this event that is now 22 years old, and that includes chefs from all over Spain with a “sensitivity” for cooking, as explained by José Carlos Capel, president of Madrid Fusión.
The rest of the candidates for this award have been: Alejandro Villa from El Café de Pandora (San Bernardo 6, Avilés), Marco Antonio Iniesta and María Egea from the Frases restaurant (Soledad 1, Murcia), Brais Pichel from Terra (Paseo de la Ribeira 65, Fisterra, A Coruña) and Aitor López from the Citrus del Tancat restaurant (Alcanar, Tarragona).
