The recipes specific to each region are frequently the cause of heated debates on social networks. And when we feel something as our own and with so much roots, we protect it tooth and nail. It is not surprising therefore that comparing an Asturian cachopo with a San Jacobo causes a stir among Internet users, to cite a recent example.
Today, controversy is served in paella format. From the @jajajers profile, the Valencians Jorge and Alexis accumulate 76 thousand followers who closely follow their desire to defend, always with humor, the authenticity of the culture and gastronomy of their land. In their latest publication, they cry out loud when they react to a video where the recipe for a “paella” that “has killed us” is shared, as they title their post.
The procedure begins by roasting the saffron wrapped in aluminum foil. Then, the cook in the video pronounces the first sin that arouses the indignation of Valencians: “If you don’t have a paella pan, use a shallow frying pan.”
It should be noted here that traditionally, the container in which the paella is prepared also receives the same name as paella, while the term paella pan refers to the stove or oven on which it is cooked. However, given the widespread use of the word paella to refer to the container, the Royal Academy of Language also accepted its definition as “a metal container similar to a frying pan, with a shallow depth and with handles, which is used to make paella.” .
Then, the cook begins to brown the chorizo, to which the comedians are startled and point to their T-shirts, where you can read the slogan “no more chorizo ??in the paella.”
Tears – in a satirical tone – come when the cook adds chopped onion to the paella. He continues with pepper, adds the chorizo ??and notes that 600 grams of rice is sufficient, to which the comedians blush with stupor.
The cook’s recipe continues with the chicken, shrimp and mussels broth, which does not please comedians either. Even less so when the chef recommends cooking it for 10 or 15 minutes, “until it seems almost dry.” Next, add peas as a final touch. The next image that appears on the screen is the fictional obituaries of the comedians with tragic music in the background.
There are many mistakes that occur in the video if what we want to prepare is an authentic paella. To begin with, the traditional recipe does not contain chorizo ??or onion, although it does have a good sauce. Likewise, we should not use broth, but water.
What can never be missing in a Valencian paella is tomato, chicken, rabbit, green beans, garrofó (a dry white bean that is difficult to find outside the Valencian Community) and saffron.
