It costs 100 euros, a much higher price than the 4 or 5 euros that a simple ham and cheese sandwich usually costs. The reason is that the most exclusive and expensive bikini in Spain (and possibly in the world) contains no more and no less than 30 g of caviar, as well as cream cheese and smoked salmon tartar. “Instead of eating the tin of caviar, you eat the tin of caviar in a bikini,” explains chef Rafa Zafra, its creator.

He came up with the recipe after a customer at his Estimar restaurants (in Barcelona and Madrid) told him that he was hungry and wanted something for a snack. “I had a very representative dish, the caviar and butter toast, which I always said was the breakfast my mother gave me when I was a child (without caviar),” Zafra explains to Comer La Vanguardia.

So the first thing that came to mind to satisfy his client was to fill a sandwich with 30 grams of caviar. “Not only is it the most exclusive bikini, but also the most enjoyable.”

That this recipe has become iconic in its Estimar restaurants, where it is served for 100 euros per piece, is not only due to the caviar; but there is more.

“The interior is very important, but also how the bread is scored so that it is crispy,” says Zafra. What then is the secret? “You have to spread it with a lot of butter in a frying pan, press it and let the butter take over the bread.
