Spring is already fully felt, so to accompany the days (which are getting longer and warmer) we have prepared a selection of wines that you should try this May, the month of flowers. These are light, fresh and elegant wines, coming from different wine-growing areas and suitable for all types of pockets.
This cava has been aged for a minimum of 15 months and is a completely dry sparkling wine. The vineyards are developed in a Mediterranean climate and on calcareous soil. Its color is pale greenish and its bubbles are fine. It is subtle on the nose, with a good combination of notes of apple, grapefruit, fresh herbs and flowers. The palate is sharp and fruity on the palate, with an aromatic finish.
This Chardonnay grape offers us verticality in the mouth in the Burgundy style, but with a nose that is more reminiscent of those of the New World. Aromas of pineapple, yellow apple, sweet citrus, butter and hints of pastry dominate. The palate is fresh and broad as it ferments in the barrel and stays with the fine lees for 9 months. In the end it leaves toasted notes and fine wood.
Very interesting and pleasant wine, whose vineyards benefit from the sea breeze to obtain a refreshing wine with a slightly saline finish. Its 6-month stay in French and American oak barrels tames it a bit without losing an iota of fruit, especially strawberry and sour raspberry. It is floral, with notes of aromatic herbs and spices. Mouth with good acidity and juicy.
Its privileged vineyards sit on slate soils, steeply sloping and enjoying a climate that will provide freshness to future wines. All of them will be key ingredients for it to be a vertical, elegant and mineral white. In aromas it is floral, herbal, citric and with hints of green apple. Its four months on the lees give it some volume and smoothness in the mouth. The finish is perfumed and above all mineral.
The vineyards are located in the Bakio area and have been recovered to give a red wine that elegantly expresses the variety and its origin. The winery is located between the sea and the mountains and they have been making it for 20 years. It is a red wine with lots of crisp red fruit, fresh herbs and field flowers. In the mouth it is tasty, medium-bodied and with a marked, well-integrated acidity.
Very fresh and particular wine, with that character marked by the area, the climate, the environment and especially by the soils. It is a project very well directed by the young viticulturist Borja Pérez, where the maxim is to express the variety and the terroir. Wine on the palate that is light and sharp with dominance of acid strawberry and a somewhat herbaceous finish. Its nose presents a good conjunction between the part of fruit, the leaves and the somewhat smoky touches.
The vineyards, worked organically, are located at high altitude and on sandy loam soils. The wine is made by hand and aged for one year in 500-litre barrels. It is a wine with a good layer and a cherry colour. Its nose is fragrant, herbaceous, with fresh red and violet fruits. In the mouth it is meaty and with good acidity. Leave the balsamic notes and spices for last.
