The definition of the word “menestra” is very specific about this preparation and refers to a stew made up of different vegetables and often with small pieces of ham, so there is no doubt about the ingredients and the difference is in how they are prepared.
The secret is to choose the vegetables according to the season, but also to play with the shapes and colors of the vegetables so that the dish is more attractive and appetizing.
The ham is added as is, without frying, especially if it is an Iberian ham, as we propose in the recipe.
