There are many ways to prepare chicken. It is one of the most versatile and easy meats to cook. In practically every gastronomy in the world we find a recipe with chicken as the main ingredient.

But there are three spices that, in my opinion, should be in all chicken preparations: rosemary, sage and thyme. I once heard a chef call them “the holy trinity”, but I don’t want to get into religious polemics.

What is certain is that there is something about the combination of these seasonings with the chicken that elevates it to the category of delicacy. And also, they go perfectly with other things that we usually put on chicken, such as garlic, bay leaf or cumin, for example.

Unfortunately, I don’t usually get these spices fresh in my town, but their dried versions work great too. Especially if you make the marinade and leave the chicken to marinate for a couple of hours.
