Legumes are one of the star ingredients of the Mediterranean diet, interesting both nutritionally and for the health of the planet. Excellent source of protein, fiber, and different vitamins and minerals, they do not contain fat, and also have multiple benefits in terms of sustainability and impact on the environment. The consumption recommendation is 3-4 times a week, however, the majority of the population does not reach these recommendations.
Today we propose some simple and delicious legume-based pâtés, ideal to increase your consumption in a different way, and outside of main meals. We can consume them both as a filling for a sandwich or with toast for breakfast, as part of an appetizer, or as another tapa for dinner with friends.
Recipe developed from the AlÃcia Foundation, where its multidisciplinary team is working on different projects within the framework of the Food Strategy of Catalonia, including the development of products made with added value, an agri-food and territory innovation project that seeks to strengthen the fabric agrarian. On this occasion, we have worked on the development of a range of spreads based on local legumes.
