> 1 large sheet of puff pastry
> 200 milliliters of whole milk
> 300 milliliters of cream to assemble
> 70 grams of flour
> 150 grams of sugar
> 1 egg
> 4 egg yolks
> 1 bunch of cinnamon
> 1 lemon peel
> Ground cinnamon to taste
1. Preheat the oven to 200 degrees.
2. Roll the rolling pin over the puff pastry.
3. Sprinkle the dough with sugar and ground cinnamon, and roll the dough lengthwise into a cylinder.
4. Cut the dough into discs of about 1 centimeter.
5. Grease the molds you are going to use and fill each mold with a puff pastry disc. Flatten it a little so that it takes the shape of the mold.
6. Pour the milk and flour into the mixer glass and beat.
7. In a saucepan, heat the cream, sugar, cinnamon stick, lemon peel and sugar over low heat. When it is about to start boiling, remove from the heat and let it infuse for 10 minutes.
8. Strain the cream, put it back in the saucepan and add the flour and milk mixture. Heat over high heat until it thickens, stirring constantly. When it thickens, remove it from the heat and let it cool.
9. In the mixer glass, pour the previous mixture and add the eggs. Beat until you get a thick cream.
10. Fill the tartlets and bake at 200 degrees for 15 minutes.
